I Can’t Believe It’s Not an Almond Croissant!

Golden toast layered with sweet smashed dates, a silky almond yoghurt cream and crunchy flaked almonds. All the almond croissant flavour you love, reimagined as a simple, nourishing breakfast or snack — no baking required.

Serves: Varies

Ingredients:

  • 2 slices of sourdough or wholegrain bread

  • 3 soft Medjool dates, pitted

  • 2 tbsp thick Greek yoghurt

  • 1 tbsp smooth almond butter

  • A few drops of almond extract

  • 2 tbsp flaked almonds

  • A splash of warm water

  • A pinch of cinnamon, optional

Method:

  1. Toast the bread until golden and crisp.

  2. Mash the dates with a small splash of warm water until spreadable. If they’re firm, soak for 5 minutes first, then drain.

  3. Mix the Greek yoghurt, almond butter and almond extract into a smooth cream.

  4. Spread the smashed dates over the toast, then spoon the almond cream on top.

  5. Scatter with flaked almonds and a little cinnamon, if using. For extra crunch, lightly toast the almonds in a dry pan first.

Why it’s good for you

The almonds provide unsaturated fats, vitamin E and some protein, while Greek yoghurt adds protein and calcium. Dates bring sweetness alongside fibre, and choosing wholegrain bread adds more fibre too. Together, these ingredients make a satisfying breakfast or snack.

It’s still a sweet, energy-rich treat — just with more fibre and a different balance of nutrients than a traditional almond croissant.
