Not Your Average Naturally Sweetened Marshmallows

These are soft, bouncy, naturally sweetened marshmallows with no refined sugar, no corn syrup, and a much gentler impact on blood sugar than traditional versions.

They’re great as a sweet treat with tea, a hot chocolate topper or even a nostalgic-but-grown-up dessert.

Serves: Varies

Ingredients:

  • 200ml apple juice (fresh or cloudy if possible, no added sugar)

  • 2 tbsp raw honey (adjust to taste)

  • 3 tbsp gelatine powder (grass-fed if possible)

  • 1 tsp of either vanilla extract, rose or peppermint oil, or espresso

  • Optional pinch sea salt

Method:

  1. Pour the apple juice into a saucepan and gently warm (don’t boil).

  2. Sprinkle the gelatine evenly over the juice and let it bloom for 2–3 minutes.

  3. Whisk gently over low heat until fully dissolved and smooth.

  4. Remove from heat, add honey, vanilla, and salt.

  5. Pour into a lined tray or silicone mould.

  6. Chill in the fridge for 2–3 hours until set.

  7. Cut into cubes once firm.

Optional Upgrades

🍓 Berry Glow Marshmallows

  • Replace half the apple juice with blended strawberries or raspberries

  • Adds vitamin C + a natural pink hue

🍫 Chocolate-Dipped Version

  • Dip the set marshmallows in 85% dark chocolate

  • Chill briefly to set

(still far lighter than shop-bought)

🌿 Calming Marshmallows

  • Add ½ tsp chamomile or lavender-infused honey

  • Lovely before bed or with evening tea
