Buckwheat, Chocolate and Orange Cookies

Ingredients:
125 g Buckwheat flour
50 g Ground almonds
½ tsp Baking soda
¼ tsp Fine sea salt
60 g Coconut sugar (or light brown sugar)
60 ml Maple syrup
80 ml Melted coconut oil (or light olive oil)
1 Large egg (or 1 flax egg for vegan: 1 tbsp ground flax + 3 tbsp water)
Zest of 1 large orange (plus extra to sprinkle)
80 g Dark chocolate (70–85%), chopped
1 tsp Vanilla extract
Instructions:
Preheat oven to 170°C (fan) and line a baking tray with parchment.
In a bowl, whisk buckwheat flour, ground almonds, baking soda and salt.
In another bowl, mix coconut sugar, maple syrup, melted oil, egg (or flax egg), vanilla and orange zest.
Stir wet into dry until just combined. Fold in dark chocolate.
Scoop 1½ tbsp mounds onto the tray, gently flatten (they don’t spread much).
Bake 10–12 mins, until edges are set but centres still soft. Cool 10 mins on tray before moving — they firm up as they cool.
Sprinkle with extra orange zest if desired.
Tip: for chewier cookies, chill dough 30 mins before baking; for extra snap, bake 1–2 mins longer.
