Golden Carrot, Orange and Turmeric Soup with Ginger
Sunshine in a bowl — naturally sweet carrots, bright orange, warming ginger, and a hint of turmeric come together in a silky soup that feels both energising and comforting.

Ingredients:
1 tbsp olive oil
2 Shallots, chopped
2 cloves garlic, minced
1 tbsp fresh ginger, grated
700g carrots, peeled and chopped
750ml good quality chicken stock or vegetable stock
Juice and zest of 1 large orange (plus extra zest for garnish)
1 tsp ground turmeric (or 1 tbsp fresh grated turmeric root if you have it)
Sea salt & black pepper, to taste
Fresh green micro leaves, to serve
Handful of seeds, to serve
Instructions:
Sauté the base: Heat oil in a large pot. Add shallots, garlic, ginger, and turmeric. Cook gently for 2–3 minutes until fragrant.
Add the carrots: Stir in carrots, coating them in the aromatics. Cook briefly to enhance their natural sweetness.
Simmer: Pour in the stock, bring to a boil, then reduce heat and simmer for about 20 minutes until the carrots are soft.
Blend until silky: Use a hand blender (or transfer to a blender) to blitz until smooth. Stir in the orange juice and zest, then season to taste.
Serve: Ladle into bowls, top with fresh herbs, and if you like, finish with a drizzle of olive oil or a sprinkle of extra turmeric.
