Cosy Nervous System Chai Spice Banana Bread
Warm, spiced, grounding. This loaf tastes like banana bread met a chai latte — soft middle, golden edges, cinnamon–ginger perfume that fills the kitchen. It’s the kind of bake you make when you want comfort but also want to feel good afterwards. Not just banana bread. Banana ritual.

Ingredients:
3 ripe bananas, mashed
½ cup almond butter or tahini (keeps it fudgy + stable energy)
2 tbsp maple syrup (optional, depending on banana sweetness)
1 egg (or flax egg: 1 tbsp flax + 3 tbsp water)
1 ¼ cup oat flour (blend oats)
2 tbsp flaxseed
½ tsp baking soda
Pinch sea salt
2 tsp cinnamon
2 tsp ginger
1 tsp nutmeg
1 tsp cardamom
(or 2 tsp pre-made chai spice blend if you have it)
Walnuts (brain fuel) - optional
Dark chocolate chunks (joy fuel) - optional
Dark chocolate, honey or nut butter to drizzle
Method:
Preheat oven to 175°C and line a loaf tin with baking paper.
Mix the mashed bananas, almond butter, maple and egg/flax egg.
Stir until creamy.
Fold in oat flour, flaxseed, chai spices, baking soda, salt. Do not over-mix — the less you stir, the fluffier it stays.
Choose your personality - Stir in walnuts for crunch or/and dark chocolate for indulgence.
Pour into the lined loaf tin.
Bake 35–45 mins, until a skewer comes out clean.
Let it cool for at least 20 mins before slicing so it sets.
Top with melted dark chocolate, honey, or nut butter.
Serve with yoghurt + cinnamon, or warm, on its own, standing in the kitchen at 9pm (relatable)?!
