Lemon Glow Bars With Collagen and Olive Oil - A slice of sunshine that works harder than your moisturiser.

This is not a dessert pretending to be healthy. This is a skin ritual disguised as a treat. We took the idea of lemon yogurt bars and made them Fallon: collagen for skin elasticity, olive oil for that Mediterranean lit-from-within glow, chia seeds to slow the blood sugar spike and Greek yogurt for protein (and creaminess without heaviness)

They’re bright, silky, and a little luxurious. Like a post-facial feeling — but edible. A snack that feels like skincare. A dessert that acts like nourishment. Glow from the inside out. Literally.

Ingredients:

Crust (Glow Base)

  • 1 cup oat flour (or blitz oats into flour)

  • ⅓ cup almond flour

  • 2 tbsp chia seeds

  • 2 tbsp maple syrup or honey

  • 3 tbsp extra virgin olive oil

  • Pinch flaky sea salt

  • Zest of ½ lemon

Creamy Lemon Filling

  • 1 cup low-fat or full-fat Greek yogurt

  • 180g cream cheese (room temp)

  • 2 scoops unflavoured collagen peptides (optional but recommended)

  • 2 eggs

  • ⅓ cup lemon juice (fresh)

  • 1 tbsp finely grated lemon zest

  • ¼ cup maple syrup or honey

  • 1 tsp vanilla extract

  • Pinch sea salt

Olive Oil Lemon Curd (Silky Glow Topping)

  • 2 egg yolks

  • 3 tbsp lemon juice

  • Zest of ½ lemon

  • 1–2 tbsp honey or maple syrup (adjust to sweetness preference)

  • 1 tbsp extra virgin olive oil

  • Pinch sea salt

Method:

1. Heat oven to 160°C (fan). Line a square 20cm tin with parchment.

2. Make the crust:

• Mix oat flour, almond flour, chia, sea salt, lemon zest.

• Add olive oil + maple syrup.

• Press firmly into base of lined tin.

• Bake 7–8 mins until lightly golden.

3. Make the filling:

• Whisk yogurt + cream cheese until smooth.

• Add collagen, lemon juice, zest, honey/maple, vanilla, pinch of salt.

• Add eggs and mix until just combined (don’t overbeat).

• Pour over crust.

• Bake 20–25 mins — centre should jiggle slightly; edges set.

4. Olive Oil Lemon Curd:

• In a small pan on low heat whisk yolks + lemon juice + zest + honey.

• Stir continuously until thickened (3–4 mins).

• Remove from heat, whisk in olive oil + pinch sea salt.

• Cool slightly.

5. Assemble:

• Spread curd over baked filling.

• Chill minimum 3 hours, ideally overnight.

• Slice into bars. Sprinkle lemon zest or chia on top.

Serve cold.

The colder they are, the silkier they taste.
