Dark, Rich and Loaded - The Superfood Rocky Road You’ll Crave
This is a super easy no bake superfood version of the tasty yet traditional rocky road. It’s so quick to make, and equally quick to devour every little morsel once set, if you can even wait that long!
Set Time: 30 in the freezer
Makes: Varies
Ingredients:
200g dark chocolate (cocoa % is up to you)
1 cup mini marshmallows
1 cup organic cornflakes
1 cup organic puffed rice cereal (rice pops)
2 tbsp dried cranberries
3 tbsp pumpkin seeds
3 tsp chia seeds
1 1/2 tbsp goji berries
4-6 Medjool dates (remove pip and chop)
Drizzle maple syrup (depends how sweet your tooth is, and what % chocolate you use)
1 tsp collagen powder
You can also add a handful of chopped pistachios or hazelnuts, along with plain popcorn is you wish.
Instructions:
Line a small rectangular tray with parchment paper
Melt the chocolate in a saucepan over hot water, or in the microwave
Once Melted let it cool slightly
First stir through the corn flakes and rice pops until fully coated
Then stir through the remaining ingredients, (excluding marshmallows,) until covered with the chocolate
Add the marshmallows last
Spoon mixture into the tray and pat down
Cover the tray and place in the freezer for approximately 30 minutes to set quickly, alternatively, leave in the fridge for 2-3 hours until set
Once set, use a warm sharp knife to slice into your desired size squares. Store in an air tight container, or these tasty treats store well in the freezer for a rainy day
